wiaw- avocado mango bruschetta and a mint chocolate chip smoothie

Happy hump day everyone! Work today was super tiring…putting away a huge order for the store really took it out of me! But it was a nice change of pace from the usual dealing with customers and all that.

So now it’s time for What I Ate Wednesday!

This week’s eats feature a couple of small, easy, but delicious recipes, both of which, of course, highlight the colour green to keep with the theme of March.

Pre-Breakfast (4:30 am)

Started off my day as I always do with a glass of warm water and lemon. I didn’t picture this last week but it’s a daily thing for me. Lemon water first thing in the morning before you eat is really good to stimulate your metabolism and digestion in the morning. Drank this while I did a some light yoga and got ready for work.

Breakfast (5:20 am)

Then I naturally made a green smoothie for breakfast. I find it hard sometimes to convince myself to drink something cold at 5 am, but green smoothies are quick and energizing which definitely helps with the early shifts. Looking at everyone’s delicious peppermint themed foods this week made me crave something like it of my own so I made my own version of the Shamrock smoothie, or the mint chocolate chip smoothie, since really, it doesn’t need to be St. Patrick’s Day to enjoy this treat. Mint chocolate chip ice cream was one of my favourite flavours and this smoothie is really like eating ice cream for breakfast.

Shamrock Smoothie (Vegan, Gluten-Free, Refined Sugar-Free, Raw)

  • 1/4 avocado (to give it this gorgeous green hue and to add a creamy texture)
  • 1 frozen banana
  • 1 cup almond milk (I used homemade but store bought is fine for not pure-raw)
  • 1/2 tbsp chia seeds
  • 1/2 tbsp hemp seeds
  • 6 drops peppermint extract
  • 3+ drops vanilla or regular stevia
  • 1 tbsp raw chocolate chunks (I swear I have a recipe for this coming. I alluded to this same idea last wiaw but haven’t gotten around to posting it yet- too many other things to share. But I will in a couple of days, promise). You could use chocolate chips as well.
  • cacao nibs and a mint leaf to garnish

Just put everything except the chocolate chunks and your garnishes in the blender and blend until smooth. Then add the chocolate chunks and pulse a couple of times until broken up and distributed throughout the smoothie. Pour into a glass and top with cacao and a mint leaf!

I also had (unpictured) 1/2 a scoop of Vega One mixed with water. I decided to drink it separately from my smoothie today, since while I like it, it defintely has a “taste” and I wanted a very specific flavour in the smoothie.

Snack (8 am)

Two of these cookies and an unpictured pear. I definitely wasn’t as good at snapping all my eats this week. But the pear was green :)

Lunch (12:30 pm)

Avocado and mango bruschetta (salsa?) with some Food Should Taste Good sweet potato chips.  Was so hungry I forgot to take a pic until I had already taken a bite…oops!

These are seriously addictive. You can buy them at Costco and they also sell small bags at Starbucks.

I struggled over what to call this recipe. It’s basically a salsa that I used to top bread that I had toasted in the oven and rubbed with a garlic clove. So I went with brsuchetta because of this last part but it could easily be enjoyed anywhere you’d normally use salsa as well!

Avocado Mango Bruschetta/Salsa (Vegan, Gluten-Free, Refined Sugar-Free, Raw)

  • 2 tomatoes, seeded and chopped
  • 1 small mango, chopped small
  • 1 avocado, cubed
  • 1/4 cup chopped cilantro
  • juice of 1 lime
  • 1 tsp agave
  • 1/4 tsp sambal olek (optional- gives it a little kick)
  • salt and pepper
  • cloves of garlic (I used 1 to rub on my 2 slices of toast. Up this number depend on how many you’re making or skip if just making the salsa)

Chop the tomatoes, mango and avocado, put in a bowl and mix. Mix the lime, agave and sambal olek in a small bowl and pour over the veg and fruit. Top with cilantro, salt and pepper to taste and toss. It’s ready!

I used it to top my brown rice bread that I had toasted and rubbed with garlic.

I also munched on more sweet potato chips throughout the afternoon. Seriously sooooo good. Go buy them!

I picked these up at the grocery store the other day since they were only 99 cents (health food store sells them for like $2!). I was intrigued by the idea of pop sweetened with stevia, even though I’ve never been much of a pop person, even before I started eating healthy. I tried the cola a couple days ago and tried the ginger ale yesterday (green!). They both kind of tasted like diet sodas that had been sweetened with aspartame so I wasn’t a huge fan. I definitely preferred the ginger ale, but wouldn’t buy it again. But if you like pop definitely give them a try as they are a healthier option to the normal and diet options.

 Snack (4 pm)

A slice of this irish soda bread pudding, hot and fresh from the oven :)

Dinner (7 pm)

 Some of my kale avocado pesto on brown rice pasta with zucchini, mushrooms, kale and orange bell pepper sprinkled with lots of nutritional yeast and pepper. With an unpictured kiwi for dessert.

Looking at all these pictures is making me hungry. Snack time!

  3. Firstly…that brushetta looks so good! I want some now. Second. because I am an appliance pervert. how do you like that ninja blender I was thinking of updating to that one but I wanted to know how it held up first. Is it the latest one?

    • It is the latest and it’s pretty good! I make almond milk with it and works like a charm. There are a few things I don’t like- You can’t really do small batches in it and you do need to scrape down a bit. But overall it’s great! I’m going to try and make almond butter in it soon so I will report on that for ya!

  4. What is with me? Everything you ate looks so lovely and tasty but all I can imagine now are those chips!! I have been on this mad chip kick and it’s driving me bonkers. Now I am craving sweet potato chips…mmmmmmmm.

    • Don’t even worry I’m right there with you. I have been eating them constantly the last few days. They are gluten-free so if you find them, do try them! Or maybe don’t, because then you will have the same problem I have, not being able to stop!

      • Just going to say I had to stop buying these because they are too good. Just sayin’. I don’t even like chips, but these are really good (like the bag says).

      • Haha I am a big chip person which is why I never buy them. It’s just too easy for me to polish off and entire bag in one sitting. And I hate doing that because then I feel lethargic and lousy! I think I’ll have to make these chips a “once in awhile” thing lol

  5. Hey there, Gabby! Thanks for your comment on my own WIAW today. I’m intrigued by your morning glass of warm lemon water. I’ve heard about this elsewhere and was wondering if you really do notice an improvement in your digestion when you drink it? I might just start incorporating it into my daily routine.

    • Hey Ali! Ya actually I was surprised at the difference! I have a lot of problems in terms of digestion that are unresolved as of yet but lemon water in the morning has really helped get me going, especially digesting breakfast. Definitely less bloating. It’s also really alkalizing so that’s a bonus!

    • Haha I was really upset with myself at first but then I figured, hey it gives the picture some character lol. Plus speaks to how good it was :)

      Doing good, very tired though and it’s only 730…might be in bed soon lol. Hope you are well too :) Is the weather in Vancouver stellar right now? Because even in Kingston its in the double digits!

      I made some of your almond pulp cookies by the way! Amazing :)

      • Awesome Gabby! That rules! I have a few in the fridge too – found cocoa nibs coated in coconut sugar (read: dangerous) – it’s horrible outside here today!! Nice to hear someone is getting nice weather (I think all of Canada but here…) Argh! Have a wonderful evening!
